AHI TUNA TARTARE

Ingredients:

1 lb Ahi (sushi grade + chunked)

1 Avocado, Cubed 

3 Green Onions, Finely Chopped 

2 Limes, Juiced 

1 t Sesame Oil 

1 t Hot Sesame Oil (adjust for palate)

1 t Sesame Seeds 

1/4 t Salt (add to taste)

Instructions:

Combine all ingredients in a bowl. Mix thoroughly and refrigerate for 30 minutes. Serve chilled garnished with cilantro, lime and plantain chips.

BEACHFRONT MARGARITAS

Ingredients:

2 oz. Tequila 

1.5 oz. Lime Juice 

1/2 Orange, Juiced

Splash of Agave

 

Instructions:

Shake it up with lots of ice. Garnish rim with salt + tajín, lime + orange.

LOBSTER SKEWERS WITH GARLIC AIOLI

Ingredients:

Lobsters Tails 

1/2 C Vegenaise 

5 Garlic Cloves, Minced

1 t Dill, Chopped 

1 Lemon, Juiced 

Salt + Pepper

Instructions:

Grill lobster for 5 minutes. Remove meat from shell, season and cook for 3 more minutes. Skewer onto skewers.

​

In a small pan add a drizzle of olive oil and garlic. Sauté for 1 minute until fragrant. Mix into a bowl with remaining ingredients. Serve aioli alongside skewers with lemon.
