Grilled Shrimp Ceviche

This light appetizer will "wow" your guests + your palate
1 lb. Shrimp, peeled + deveined, tails off
1 Avocado, diced
1 Tomato, diced
1 Cucumber, peeled, seeded + diced
1 Bell Pepper, diced
1/4 Jalapeño, seeded + minced
1 Clove Garlic, minced
Handful of Cilantro, chopped
2-3 Limes, juiced
1 Lemon, juiced
1 Orange, juiced
Salt and Pepper
Season shrimp with salt and pepper and grill for 4 minutes. Don’t worry if they aren’t fully cooked the citrus will cure them. Allow to cool.
Prepare all veggies and combine everything in a large bowl.
Chop up shrimp and stir in. Season with extra salt to taste.
Let sit in fridge for an hour before serving.
Served in cocktail glasses with lime wedge and cilantro.
